  • Start the "salsa" first so the berries have time to macerate. Mix the crushed berries, sugar and triple sec and let sit until assembly time.
  • Mix cinnamon and sugar together and set aside. Heat oil 2 - 3 inches deep in a skillet. When hot add 3 or 4 tortilla wedges at a time and fry until crisp and golden. Remove to paper towels to dry and sprinkle with some of the cinnamon-sugar mixture while still hot. Repeat until all of the wedges have been fried and dusted with sugar mixture.
  • Mix Cool Whip with Kahlua and set aside.
  • To assemble: arrange 5 or 6 tortilla wedges on a plate. Drizzle liberally with the cajeta quemada. Top with "salsa" and Kahlua-whipped cream and serve immediately.


Cajeta quemada can be found in any well stocked grocery store in the Hispanic section or in a Hispanic grocery store.
