  • Preheat oven to 350F. In a large pot, cook pasta according to package directions. Drain and set aside.
  • In the same large pot, saute onions, peppers and garlic in a small amount of oil. Add sausage and oregano, and cook until browned. Add mushrooms, cook until slightly soft. Drain very well. Return to pot, and add olives, spaghetti sauce and pasta. Mix well. Mix in mozzarella cheese, mix again.
  • Pour mixture into baking dish and bake until cheese melts. Serve with fresh Romano and crusty garlic bread.


The timing and amount served may vary. I have never actually timed this recipe and the number of people served has varied, based on how much each person served themselves and how many people show up. This is the casserole I often take when I have to "bring a dish to pass". Also it can be done "stove-top" or prepared and kept in a slow cooker to keep warm (on low). I have used ground beef, instead of Italian sausage or sometimes both (1/2 lb. each). If I don't use sausage, I add 1-2 tsp. ground fennel. I have also tossed in diced pepperoni; basically any pizza topping will do in this recipe. If you like it spicy, add crushed red peppers, to taste. This is a very adjustable recipe.
