  • Cook noodles according to package directions for "al dente" (just done).
  • While noodles are cooking, make a rue by melting the butter in a medium saucepan and adding the flour. Cook over low heat, stirring constantly for about 1 minute. Add the milk and heat over medium heat stirring constantly to bring it almost to a boil (do not boil or the butter and milk will separate). If you don't stir constantly, it will scorch the milk.
  • Remove from heat and add the cheese. Stir until cheese is melted. Add salt and pepper to taste. Hint: white pepper goes really well in this sauce and it will not be as visible as the black pepper.
  • Mix sauce with the noodles once they are drained and pour the whole thing into a buttered casserole dish. Top with the extra shredded cheese and bake at 350 degrees, uncovered until cheese is melted, about 5-10 minutes. Serve hot.

Special Equipment Needed


Hint: go for the lowfat cheeses if you're watching your fat intake.) Add a can of drained mixed veggies before baking to up the nutritional value. This dish is also good reheated. You can make this ahead of time, just do all the steps before baking it, and refrigerate covered until needed. Lasts a few days this way.
