  • Prepare the chicken: Cut the chicken into 8 pieces and dredge in flour. In a heavy-bottomed pot over high heat, warm the olive oil. Add the chicken and cook until golden brown on all sides.
  • Deglaze with the brandy and wine (add away from the stove top), scraping up any browned bits from the pan. Add parsley and season with salt and pepper. Bring to a boil, lower the heat and simmer for 2 hours.
  • Meanwhile, prepare the sauce: In a skillet over medium heat, melt the butter. Add the pancetta, mushrooms, onions and garlic. Lower the heat and cook for 15 minutes. When the chicken is almost fully cooked, add the sauce and cook together until the chicken is cooked through. Sprinkle with the rosemary. Serve with polenta.

Special Equipment Needed


Whenever a recipe requires the addition of alcohol, move the pan away from the heat source before adding it, then replace the pan after the liquid has been poured. This greatly reduces the chances that the alcohol might ignite.
