I prepare ingredients the night before (in crock-pot) and put in the fridge. In the morning before I leave for work I turn it on and it is ready when I get home. If you add the potatoes you have a complete meal! I also do this sometimes on Saturday morning so I can go about my day and not worry about dinner that night.
If you choose not to add the potatoes this is absolutely DELICIOUS served over rice, especially brown rice!
This recipe can easily be adjusted to your family's requirements. Just add more chicken, another can of soup and extra vegetables if you have a larger crock-pot.
