  • Mix together flour, salt, baking powder and 1/2 cup sugar. Cut the shortening into dry ingredients using a pastry blender. Add the beaten egg to milk; combine with dry ingredients, just stirring until all ingredients are moist. Dough should be thick.
  • Spread into a greased 9 inch round cake pan. Brush dough with melted butter, press the peach slices into the dough in a decorative pattern. Mix together the cinnamon and 4 tablespoons of sugar; sprinkle on top.
  • Bake in a 400 degree oven for approx. 30 minutes or until a toothpick comes out clean.


You can double the recipe and spread it into 3 (8-inch) pans. This is a great coffee cake and is also good for dessert. Quick and easy to make and is perfect for fresh peach season. Nectarines would be good too.
