My family prefers this without garlic -- the mozzarella adds enough flavor by itself. I find it easiest to let everyone add their own garlic, basil, crushed red pepper flakes.. the list goes on.
I came up with this recipe when my grocery store was out of plain shredded parmesan. The mozzarella is delicious, and the cheese melts much better than plain parmesan.
Most Alfredo doesn't reheat well, but if you have leftovers, heat the noodles and toss the cold sauce in to the hot noodles. This sauce doesn't separate like others!
