  • Cut chicken into bite-sized pieces and cook in a large skillet over medium heat until done (about 10 minutes). Add onion and bell pepper to skillet and cook for 1-2 minutes until onions are tender. Reduce heat, add cheese soup and canned tomatoes to skillet and stir until combined. Remove from heat and add ice to cool mixture.
  • Once ice has melted, dip tortillas in mixture to coat with sauce, then use a slotted spoon to add 1/12 of the chicken and veggies in middle of each tortilla. Roll and place seam side down in 13x9 glass baking dish. Pour remaining sauce over tortillas.
  • Bake at 350 degrees F for 25 minutes. Sprinkle shredded cheese over top of enchiladas and bake for 5 more minutes or until cheese is melted.

Special Equipment Needed


To reduce the spiciness, substitute plain diced tomatoes for diced tomatoes with green chilies. The amount of onion and green pepper may also be reduced.
