  • Butter and flour tube pan. Sift together flour, baking powder, and salt. Set aside. Cream butter. Add sugar and mix until light and fluffy. Add eggs one at a time, incorporating each egg before adding the next. Alternately, add flour mixture (three installments) and milk (two installments), beginning and ending with flour mixture. Stir in lemon zest.
  • Bake at 350 degrees F for 50-60 minutes, or until toothpick comes out clean. Keep in pan for 5 minutes before turning out to wire rack over sheet pan.
  • Meanwhile, make glaze:
  • Heat sugar and lemon juice in small saucepan over medium heat until sugar is dissolved. Brush glaze onto warm cake. Allow time (a couple of hours) for the glaze to soak into the cake before cutting.
