Easter Pastel Jell-O "Martinis"

  • In a large mixing bowl, add the boiling water to the package of Jell-O contents. Stir for at least 2 minutes or until completely dissolved.
  • Add the cold water and stir until ice is melted and Jell-O is slightly thickened. Place bowl in freezer for about 7-10 minutes or until the bowl is cool to the touch.
  • With a wire whisk, thoroughly mix Cool Whip into the Jell-O. Place bowl back into the freezer for at least 10 minutes, but no longer than 15.
  • While Jell-O is chilling, prepare disposable Martini glasses, allowing 3-4 per package of Jell-O depending on how much air you incorporate with the Cool Whip.
  • After 10 minutes, whisk Jell-O/Cool whip mixture again to thoroughly incorporate Cool Whip into Jell-O. Place in freezer for another 10 minutes or until mixture will mound easily and hold stiff peaks.
  • Spoon into Martini glasses and thoroughly chill another 2-3 hours or overnight.

Special Equipment Needed


* Whatever flavor you like (even sugar free will work if you are counting carbs) I used 3 tubs of Cool Whip and 6 packages of Jello (green, purple, blue, red, orange, yellow) for a decorative touch for Easter. When placed on a tray with Easter grass, it makes a very nice centerpiece for the table. I have pictures if you are interested.
