  • In a large skillet, heat olive oil over medium-high heat. When hot, reduce heat to medium and add ground beef, onion, garlic and seasonings. Saute about 10 minutes, stirring occasionally, until beef is completely browned and vegetables are tender. Drain off grease.
  • Stir in salsa. Cover skillet and simmer 10 minutes.
  • Spoon over prepared rice. Sprinkle shredded cheese on top. Serve and enjoy!
