  • Preheat oven to 350 degrees. Cut chicken into small pieces and fry in a skillet until done. Drain the grease.
  • Cut 1 bell pepper into strips and the others into small pieces. On low heat, add 1 can of the enchilada sauce, the strips of bell pepper, and half the package of cheese to the chicken. Cook until peppers are tender and cheese is melted.
  • Add the mixture to the shells until they can be wrapped like a burrito. Put them seam done in a greased baking dish. Pour other can of enchilada sauce on top, finishing with small pepper pieces and remaining cheese. Cook for 10-15 minutes or until cheese is melted.

You can also use hamburger or steak instead of chicken with this recipe.
