  • 1.) Preheat oven to 450.
  • 2.) Pour coconut milk and water into large bowl. Mix in 1-2 tsp. curry (The more you use the spicier it will be).
  • 3.) Trim fat off of chicken, and slice chicken into 2 inch thick slices. Place into bowl.
  • 4.) Let marinate in fridge for 10 minutes.
  • 5.) Slice peppers into thin strips, no longer than two inches long.
  • 6.) Take chicken coconut mix and pour equally into two baking pans.
  • 7.) Get 2 baking pans, roughly 9x9 and pour 1 ½ cups of rice into each baking pan. Make sure rice is submerged, and try to spread it out evenly.
  • 8.) Place peppers on top of mixture, and place in oven. Bake for 30 minutes, check rice. You may need to leave it in for 10 more minutes.
