  • Place the tortillas on a microwave-safe plate, cover with paper towels. Microwave for 15 seconds or until slightly warm.
  • Scramble eggs with crumbled bacon or sausage or diced ham, add salt and pepper to taste.
  • Place half the egg mixture in a row across each tortilla, add 3 half slices of Velveeta over eggs, and top with salsa. Roll the tortillas into open-ended burritos.
  • Microwave on high for one minute. Allow to cool for 5 minutes. Cut each burrito in half to serve.

Special Equipment Needed


These make a nice change from traditional breakfast fare. Melted Velveeta is very hot, and burritos can be drippy, so eating them over the plate is recommended!
