  • In a 2 cup measuring cup mix: flour, salt, baking powder, granulated sugar, and ground cinnamon. Then add and stir in 1 rounded tablespoon brown sugar.
  • In a one cup measuring cup: add milk, eggs, and vanilla. Mix well with spoon, fork or whip then add to flour mixture and mix with spoon only until smooth.
  • Heat about 1-1/2 inches of oil in heavy or iron fairly large skillet. Keep oil at medium heat, not low at any time but not smoking hot. Pour batter in circles, beginning with tiny circle in center and going around making a loose circle with batter in oil leaving bits of spaces between rounds. Fry about 45 seconds on each side or until brown. Use two spatulas to turn them. Drain on paper towels. Sift powdered sugar on top and move to serving plates. Makes six medium cakes. Can be eaten with pancake syrup if desired.
