  • 1. Preheat oven to 200 C/ 400 F/ Gas 6. Lightly flour baking sheet.
  • 2. Sift the flours, salt and baking soda/powder together into a bowl. Make a well in the center and add the butter/spread and buttermilk. Working outward with a fork from center to sides, mix the ingredients until they form a soft dough.
  • 3. With floured hands, gather the dough into a ball. Transfer to a floured surface and knead for 3 minutes. Shape into a large round.
  • 4. Place onto baking sheet and cut a cross into the top with a sharp knife. Dust flour over bread.
  • 5. Bake until brown for 40/50 minutes or 35 minutes if using a fan assisted oven. Transfer to cooling rack.


This is lovely and goes well with summer salads and barbeque foods. I also find it works better with the baking powder.
