  • Heat a large skillet on medium heat. Spray with PAM non-stick cooking spray. On a clean work surface, spread 1/2 Tbsp of the salad dressing on 1 (10-inch) flour tortilla. Sprinkle tortilla with 1/2 cup shredded cheese and sliced meat. Fold tortilla in half. Repeat with remaining tortilla.
  • Heat each tortilla half 3 to 4 minutes per side until tortilla is slightly golden brown and cheese is melted.
  • Allow to cool on plate for 1 minute. Cut each tortilla half into 3 wedges. Serve warm with a dollop of sour cream.

I love to barbecue during the summer months, but cooking for two leaves quite a bit of meat leftover. One rainy night, I created this quick and easy dinner using leftover honey BBQ pork ribs. This versatile recipe can easily be adapted to use up a myriad of leftover grilled meats. Regular Italian or French salad dressing can also be subsituted.
