  • Crust: Prepare the graham cracker crust in a 9" square or round cake pan according to package directions. Cool, if it is baked, while you prepare the filling.
  • Filling: Prepare lemon gelatin according to the package directions. Refrigerate. When the gelatin has just started to set, put it into a large bowl and beat it with an electric mixer for about two minutes. Add the lemon juice and zest and the cheesecake filling. Continue beating until the mixture is smooth and light.
  • Pour the filling into the prepared crust and refrigerate until it is set.

Notes

This is a light in texture but rich lemon cheesecake. It may be served frozen.
