  • Mix apples, oatmeal, 1/2 of the brown sugar, apple juice, and cinnamon in an oven safe dish. Place small dabs of butter all over apple mixture. Sprinkle with remaining brown sugar.
  • Bake at 375 covered for 20 minutes, then an additional 5 minutes uncovered. Serve warm or cold with either frozen vanilla yogurt or vanilla ice cream.

Notes

This is a low fat version of an "Apple Betty". Definitely great for a snack or a low cal dessert. Both my husband and children love this dessert, and I love making it since it's so easy - and I know they are getting their fiber (oatmeal) and fruit all in one serving.
