  • Preheat oven to 350. Using 1 Tbsp. of butter (not melted) grease pan. (Any leftover butter toss into the last 4 Tbsp. you will use at the end.) Beat egg, sour cream, cream cheese and cake mix in large bowl with mixer on low till moistened, scrapping bowl as needed. Blend in 4 Tbsp of melted butter. Beat on medium speed 2 minutes. Batter will be VERY thick (almost like dough)!
  • Spread in lightly greased 13x9-inch baking pan. Arrange peach slices on batter, pressing in slightly. Sprinkle evenly with gelatin. Drizzle evenly with remaining melted butter, sprinkle with pecans, last with cinnamon.
  • Bake 40-45 minutes or until toothpick in center comes out clean. Serve warm or room temp. Cut into 24 pieces. Cover & refrigerate leftover cake!


Enjoy! Best served warm with low fat vanilla ice cream or fat free Cool Whip, and fresh ground cinnamon on top! Spice it up a notch add 1/2 cup sliced almonds sprinkled on top instead of pecans!
