  • Preheat oven to 350 degrees
  • 1. Line muffin tins with cup cake liners. (makes 24)
  • 2. In large mixing bowl, combine cake mix and juice. Mix well.
  • 3. Add egg whites (or egg substitute). Mix well.
  • 4. Blend in sour cream.
  • 5. Fill cup cake liners 3/4 full.
  • 6. Sprinkle walnuts over top of cupcakes.
  • 7. Bake in 350 degree oven for 23-28 minutes.
  • 8. Cool on wire rack.

Notes

These make an airy light summer cupcake great with fresh strawberries on the side.
