We serve this with a green salad and roasted potatoes.
This was very easy and the pork was very tender and moist. The only thing I would change would be to decrease the amount of salt, perhaps by half as much. Also, I did not have herbs de provence, so I just used crushed basil and thyme instead and it turned out great. A one-pound roast is not that big, so if you are feeding more than 3 or 4 adults you would need more than one roast.
