  • Preheat your oven to 350 degrees F. Prepare both boxes of stuffing according to the package directions. Set aside until cooled then pour into a big mixing bowl. Slice the sausage links into round bite size pieces.
  • Spray a nonstick skillet with cooking spray and cook the sausage until browned all over. Drain on paper towels. Finely chop the onion, bell pepper, and celery (I prefer using a food processor/chopper for this kind of job). Saute veggies with butter in the skillet you cooked the sausage in. Take the skillet from the heat. Add the cooked sausage to the cooked veggies in the skillet. Mix together. Transfer into the mixing bowl with the stuffing. Chop up the boiled eggs and stir into the stuffing mixture. Pour in the chicken broth to your stuffing mixture (use only what you need to make it very moist but not soupy).
  • Cook in a 2qt. glass dish for 30 min. or until brown on top and the center is set.

Special Equipment Needed

This is an easy recipe to use to serve with a whole baked chicken or for the holidays with turkey. Double the recipe to make more servings. It goes good with homemade cranberry sauce or a can of Ocean Sprays cranberry sauce. Enjoy!
