  • In a saucepan, pour the broth over the chicken breasts. Heat until simmering, about 15 minutes. Leave uncovered to reduce the broth. Turn chicken over after 10 minutes. Then cover and cook thoroughly 5-7 minutes.
  • Uncover and add mushrooms, peppers, and onions. Recover and cook vegetables through another 5 minutes.
  • Turn off heat, uncover, and arrange the onions and peppers on top of each chicken breast. Sprinkle cheese generously over each breast. Cover and let stand until cheese is melted. Serve over rice or noodles (or more vegetables).

Kids love participating in this recipe. I let them put the veggies and cheese on top! I sometimes add extra peppers and mushrooms! My kids love the vegetables in this recipe.
