  • Prepare the Spanish rice mix according to box directions, using unsalted butter if you prefer to lessen the salt in this recipe. Add can of tomatoes to mix according to directions.
  • While this is cooking, put the refried beans in a 1-1/2 quart pan on low. Add burrito seasoning mix and tomato juice. Simmer uncovered. Stir slowly every few minutes.
  • While this is warming, heat corn on stovetop or in microwave. While these dishes are cooking, prepare other ingredients for burrito assembly.
  • Layer refried beans, Spanish rice, corn, shredded cheese and sour cream on wrap. Sprinkle on optional ingredients. Roll up & serve immediately.
