  • Preheat a small skillet. Pop bread in toaster. To separate the egg whites, crack eggs over a bowl and toss the yolk between the shell halves until all of the whites fall in to the bowl. Discard yolks.
  • Coat skillet with cooking spray and pour in egg whites. Mix them around with a spatula until they're fully cooked scrambled eggs (about 2-5 minutes). Spread mustard on the bread and top with eggs (it's an open-faced sandwich). Add salt and pepper.
  • Make a smoothie by mixing banana, berries, and soy milk in a blender. Drink up.
