  • Heat oil in a pan on high heat and add onion. When onions are tender and get some light color add crushed garlic. Fry for a few seconds and then add 1 tablespoon of water and lower the heat.
  • Then add red chili powder, salt and turmeric. Fry for a few seconds until spices are roasted. Add tomatoes and green chilies and place the lid on pan. Let it cook for 2 minutes.
  • Remove the lid. The tomatoes should be tender and oil should separate on top. Add cubed eggplant in it, fry for 5 minutes, and put lid on it. Let it cook for half an hour on medium heat, checking in between.
  • When eggplant is tender and in a smooth texture, fry it again for five minutes. This will separate the oil from it. Then it is ready. Add cut cilantro and eat with pita or rice.


Should check inbetween cooking to prevent sticking.
