  • Clean and slice carrots. Place in a 2 quart pan, cover almost with water and bring water to boil. Then turn down on medium heat and cook until carrots are tender.
  • Then drain all water and pour into a buttered 9 by 12 pan while still hot. Slice Velveeta cheese in slices and place over top. Then mash or crumble favorite crackers over top.
  • Place in a warm oven for 15 minutes at 275 degrees F. Then turn on broiler for very short time to brown crackers. Remove and serve warm.

You can make the dish as large or small so easily. Try this at Thanksgiving This dish is so easily made and all ages love it. I love it better the next day. You have added no salt, no sugar, but yet it seems to be sweet. Every time I serve it, I have an empty dish very quickly. Light and tasty and very appealing yet inexpensive and a royal dish to complete any dinner.
