  • Rinse chicken. Trim off fat. Cook chicken in 1/4 cup water or broth until chicken is browned. Stir often.
  • Add onion, peppers, and garlic. Cook stirring often until onion is opaque and starting to brown. Then add broth, hominy, enchilada sauce, dried cilantro, dried oregano, salt and pepper.
  • Bring to a boil over high heat then reduce heat and simmer. Stir in spinach and cook just until wilted. May garnish with lime and sprig of fresh cilantro if desired.
