  • Sauté chicken and onion in skillet with salt, pepper and garlic salt until warmed and onions are soft. Preheat oven to 350 degrees. Let chicken cool, then mix with 1/4 cup of the red sauce, 1/4 cup green sauce, 1/2 cup sour cream and 1/4 cup cheese. Heat tortillas in the microwave about 45 seconds or until pliable. Mix remaining red and green sauce.
  • Lightly cover the bottom of a 9x13-inch baking dish with some of the sauce. Place one heaping tablespoon of the chicken mixture in each tortilla and roll. Place rolled tortillas in the dish. Lightly cover each enchilada with about 1 Tbsp. of the mixed sauce. Bake for 20 minutes.
  • Mix remaining 1/2 cup sour cream with about 1/4- 1/2 of the mixed sauce. Refrigerate until enchiladas are done cooking. At 20 minutes, remove enchiladas and cover with the sour cream mixture. Sprinkle with remaining 1/2 cup of cheese and bake for an additional 5 minutes.
