  • Preheat oven to 350 degrees F. Wash and fillet the chicken breasts to create four thin pieces. Coat the chicken breasts in olive oil. Mix bread crumbs and parmesan cheese in a large bowl. Place the chicken in the bread crumb mix until chicken is coated. Shake off excess and set aside. Thinly slice zucchini. Slice spinach leaves into 1/2 inch think strips. Set aside.
  • Grease a glass baking dish with olive oil. Place the chicken fillets apart from each other on the dish. Layer the sliced spinach on each fillet, followed by the zucchini slices. Using a small spoon, add sauce over the zucchini and spread to cover each fillet. Top each fillet with cheese.
  • Bake for 15 minutes or until chicken is thoroughly cooked. Serve with your favorite pasta.

Special Equipment Needed


If you would like more peppery fillets, rub each fillet with black pepper after coating in olive oil. To up the taste of the bread crumb coating, add oregano and garlic powder to the mix before coating the chicken. For a more low-calorie dinner, replace your regular pasta with a large portion of your favorite steamed vegetables.
