  • Preheat oven to 325 degrees F. Coat 2 qt. shallow baking dish with cooking spray. Peel potatoes, slice thinly and place in microwave safe bowl with water. Cover and microwave on high for 7-10 min or until tender when pierced with fork.
  • Meanwhile place half-and-half in medium saucepan, heat on medium for 5-7 minutes or until warmed. Whisk in cheese, salt, garlic, mustard and pepper. Cook 3-4 minutes stirring occasionally or until cheese melts. Remove from heat and stir in potatoes.
  • Pour into baking dish; top with parmesan cheese. Bake 20-25 minutes or until cheese melts and sauce bubbles around edge. Serve.


Can also be made with a white sauce, instead of half-and-half (1 1/2 Tbsp. flour, 1 1/2 Tbsp. butter or margarine, 1 1/2 cups 1% milk) then proceed with rest of recipe.
