  • Do not peel, just get the stone out and put in dish pan. Mix sugar and vinegar. I add a little water just so it will go over the peaches better stir and refrigerate overnight.
  • Next morning put them on top of the stove and cook. It will take aprox 3 to 4 hours until it cooks down to thick. It will be brown looking, cool. I put it in plastic bags and freeze.

I use this for fried pies. They taste like dried peaches and are wonderful. My mother-in-law gave me this recipe 40 years ago. I also use pie crust for my fried pies and they are begged for from everyone.
