  • Mix dry cake mix with lemon pie filling (do not add the water called for on the box. Just the pie filling).
  • Spray a 13x9x2 cake pan with vegetable oil. Pour batter in the pan. Bake at 350 degrees F for 25 minutes, or until golden around the edges and toothpick inserted in the center comes out clean. Cool on wire rack.
  • Frost cooled cake with lemon frosting. Cut into bars.


I found this recipe in a church cookbook. It is refreshing any time of year, and a snap to make when you are in a pinch for a quick dessert.
