  • In mixing bowl combine 2 cups of the flour and the yeast. In small bowl combine potato, oil, sugar, salt and 1 1/2 cups warm water (110 degrees F). Add to dry ingredients.
  • Beat at low speed with electric mixer for 1/2 minute scraping sides of bowl constantly. Beat 3 minutes on high. By hand stir in remaining flour. Cover, refrigerate for at least 2 hrs. or up to 3 days. Punch down, turn out on lightly floured surface. Cover with clean dish towel. Let rest 10 minutes: with lightly floured hands shape into 24 buns.
  • Place in greased 13x9x2 baking pan. Cover let rise till almost double (40 minutes). Bake at 400 degrees F till done 16-20 minutes.

Special Equipment Needed


The potato makes these rolls very light and fluffy. They're very easy to make because there's no kneading. Hint: while I'm shaping into buns I turn my oven on very low heat. When the buns are ready to rise to double turn off oven and insert pan of rolls for 40 minutes then they're ready to bake!
