  • Preheat oven to 350°F. Grease and flour a 9x13 pan and prepare and bake cake mix as directed.
  • After removing cake from the oven, prepare in separate bowls the lime and strawberry Jell-O using only 1 cup of boiling water to each flavor to dissolve. Next poke holes (with a fork or a pipe cleaner works wonderfully) over the surface of the cake and alternately with a large spoon saturate the cake with the Jell-O.
  • In a medium saucepan, combine sifted flour, sugar and milk and bring to a boil stirring continuously until thickened to a pudding texture. Remove from heat and add vanilla, butter and yellow food coloring. Allow to cool slightly and spread over the top of the cake. Refrigerate till chilled and then spread the tub of Cool Whip over the cake and serve.

This is a traditional Christmas cake at our house loved by everyone, especially children seem to enjoy this particular cake. The pudding which is used over this cake is a delicious vanilla pudding by itself or can be used for banana pudding. My mother use to add the yolk of eggs to her pudding and then we later discovered that one could omit the yolks and use yellow food coloring instead to give it the color.
