  • Clean, sterilize, and prep jars and lids according to manufacturer's directions.
  • In a large pot combine fig juice and pectin and bring to a boil. Add the sugar, stirring until all the sugar is dissolved. Bring to a full rolling boil, stirring constantly. Boil for 1 minute, and then remove from heat.
  • Put immediately into hot prepared jars. Seal and process in hot water bath (see instructions included with jars or pectin).


*I couldn't find any recipes for fig jelly, but ones for jam abounded. I needed a seedless version that my kids would eat, so I came up with this one based on what I have done before with blackberries and on the fig jam recipes I researched. I used juice I prepared from fresh figs for this jelly. It is seedless. The recipe for the juice is listed separately as "Seedless Fig Juice (For Jelly)" (located in the same section).
