  • Salt and pepper the steaks and allow them to sit at room temperature for at least 30 minutes.
  • Heat an iron skillet at medium temperature. Sear the meat on both sides for about 8 minutes. Transfer to a plate and tent with foil.
  • Add the oil to the pan and scrape up the brown bits. Add the garlic and shallot. After about 1-2 minutes, add the mushrooms. Mix in the Swiss chard and saute for several minutes. Add the balsamic-wine mixture and top the skillet with a lid. When the Swiss chard is completely wilted, split it between two plates and top with the meat and extra sauce from the pan.

Notes

Serve a medium sized baked potato on the side with a healthy butter alternative such as vegetable spread, a small amount of low fat sour cream, and scallions or chives.
