  • Boil the cubed potatoes in a pan of salted water, and when almost done add the fish and the bay leaf. Boil till fish is done. Drain fish and potatoes in a colander and leave to dry out for about 15-20 minutes. Remove and discard bay leaf.
  • When all the water has been drained put in a bowl and mash with a fork till resembles a soft dough like mixture. When cooled season to taste with salt, pepper, onion powder, and parsley. Add the egg to the mixture when it’s cooled down and then the corn flour. Leave in the fridge for about an hour.
  • Then shape into croquettes of the desired shape and deep fry in hot oil. First fry one croquette and if you see it breaking up add a bit more of corn flour.

Notes

Hi. I make this for my daughter who doesn't like to eat fish at all and in this way she just loves it. Is light and not too oily coz I don't use bread crumbs.
