  • Crush the oregano by pressing it into your palm with one thumb. Mix the oregano together with the rest of the ingredients in a small bowl until you have a homogeneous mixture.
  • Work the rub into both sides of the flank steak with your fingertips, then rub in enough oil so the meat is glistening. You can rub the flank steak up to 3 hrs. or so before you cook it. Cover steak with plastic wrap and refrigerate until about 30 minutes before you're going to cook it.
  • Set up the grill and light the coals. Grill the flank for 5 minutes, moving it around a bit. Flip the steak over and cook it until it's done to your liking. A 1 1/4 lb., 3/4 inch thick flank steak will be medium-rare about 6 minutes after you flip it. Take the steak off the grill and let it rest about 10 minutes before you slice it.
