  • Preheat oven to 400 degrees F. Squeeze water out of spinach. Put turkey in bowl. Add spinach, all but 3 Tbsp. of onion, garlic, egg, 1/4 cup milk, the bread crumbs, grated parmesan, salt & pepper. Make 12 balls.
  • Bake 20 minutes.
  • In small sauce pan -- medium heat -- drizzle extra virgin olive oil, butter, and onions. Cook for 2 minutes. Whisk in flour; cook 1 minute. Whisk in 1 1/2 cups of milk and cup of stock. Bring to boil and add cheese. Season with salt, pepper and nutmeg. Place meatballs on plate and top with sauce.
