  • Preheat the oven at 375 degrees. Weigh and measure your flour, shortening, butter, sugar (both separately), baking powder, salt, buttermilk.
  • - Start on dough first -
  • Add flour, shortening, butter, sugar (1 cup), baking powder, salt in mixer with pastry knife attachment. Combine on speed 1. Mix just until crumbly...DO NOT OVER MIX!! Add the buttermilk and mix just until ingredients are combined. Get scoop-#12 on silicone sheet pan close together and press down 1/3 of height with 3 fingers.
  • Bake for 7 minutes, then turn sheet pan, and bake 6 more minutes or until golden brown.
  • - The topping -
  • (Wear gloves.) Wash and thin slice strawberries as you hold on to the leaves. Place sliced berries in a 4 1/2 inch pan. Gently stir in sugar (2 cup).
  • - Assemble -
  • Wait until the shortcakes are cool, then cut shortcakes in 1/2 carefully with serrated knife. Have 2 bags whipped topping / sugared strawberries.
  • Place bottom of shortcake in a bowl, top with whipped topping, then put some strawberries, top with the other half of the shortcake, put more strawberries on last to make it pretty, and then put the whipped topping on.
