  • Preheat oven to 350°F. Mix graham cracker crumbs and 1/4 cup of sugar together. Melt butter and add to crumbs. Spread and pat down crumbs in a 12" springform pan. Bake for 10 minutes, remove and let stand.
  • Reduce oven to 300°F. In large mixing bowl beat cream cheese until smooth. Add 1 cup of sugar, lemon peel, vanilla, and 4 egg yolks, beat until well mixed. In a separate mixing bowl beat 4 egg whites until they form stiff peaks. Fold egg whites into cheese mixture and pour into springform pan.
  • Bake for 70 minutes (check with toothpick to make sure it’s done). Remove from oven and run knife around edge of pan to release for shrinking as it cools.


Add canned pie filling to it if desired. Also a good option is to add peanut butter chips before baking and then coat top with chocolate almond bark after cooled. This is a modified fluffy version to a heavy cheesecake I made growing up and everyone just loves it.
