  • Drain green beans and empty into a large mixing bowl. Beat eggs slightly and add the eggs into the bean mixture and stir with whisk. Add the parmesan cheese and stir.
  • In a small bowl combine flour, baking powder, salt and pepper and mix well. Then add to bean mixture. Stir well.
  • In a large skillet or frying pan pour about 1 or 2 tablespoons of extra virgin olive oil into pan. When oil is hot add about 1 tablespoon of green bean mixture into pan and flatten into patties with back of spoon. When slightly golden around edges, flip over and cook other side about 2 or 3 minutes each side. Remove patties with spatula and place patties onto a plate and sprinkle them with extra parmesan cheese and serve warm.


Patties will last a few days in the fridge in a sealed container or Ziploc baggie. It's a great way to get your kids to eat their veggies too. You can also make these patties with canned spinach. My grandchildren love them.
