  • Preheat oven to 325 degrees F. Combine oil, sugar, and eggs. Beat at medium speed for about 3 minutes. Add vanilla. Combine dry ingredients; add to wet mixture. Fold in diced apples and pecans. Do not use electric mixer after adding apples and pecans.
  • Pour into a greased and floured tube or bundt pan.
  • Bake for 1 hour and 20 minutes or until cake springs back when touched.
