  • 1) Prepare tropical fruit.
  • Pineapple: Cut top and bottom off; cut skin off with a serrated knife. Slice lengthwise into quarters and then crosswise into thin wedges. (You can also use precut fresh pineapple.)
  • Kiwi: Remove skin with a peeler. Slice into rounds; halve each one.
  • Mango: Remove skin with a knife; cut fruit off pit and slice into strips.
  • 2) Rinse all berries except cranberries. Cut the tops off strawberries and cut in quarters.
  • 3) Gently combine all fruit in a bowl. Transfer to bowls. Garnish with cherries and any extra mango (if using).

Special Equipment Needed


TIP: To sweeten this salad, combine 1 Tbsp. honey with 1/4 cup fresh lime juice, mix well, and toss with the fruit before serving.
