  • Cook rice and set aside in fridge at least 3 hours prior to cooking the vegetables
  • Turn on burner to medium. Pour vegetable oil into large pan. Put broccoli and carrots in and stir-fry until the vegetables start to get soft. Add mushrooms. Pour soy sauce on top (if desired) and mix vegetables.
  • In a smaller pan, scramble eggs, and then add them to the vegetables. When everything looks cooked enough, mix in rice. Add some more soy sauce. Make sure rice gets warm enough for your taste. Scoop the fried rice into a large bowl. Enjoy!

Notes

With this recipe, measurements don't have to be exact. I usually use whatever vegetables I have available. This recipe is fun to experiment with.
