  • 1. Simmer turkey with the broth, celery, onion and bay leaf for 35 min. covered with lid, until vegetables are tender. Strain the broth. Dice the turkey meat.
  • 2. Stir in garbanzo beans and bean liquid, chilies and oregano. Return meat to pot. Simmer, uncovered, for 5 minutes.
  • 3. Serve in large soup bowls. Top with cheese cubes, if desired, and sprinkle with the black pepper or dill.

Cubes of tender turkey and earthly garbanzo beans fill a clear chicken broth soup. Oregano, bay leaf and mild green chiles add to the Western flavor. Good served with large squares of chile cornbread or wheat bread and a crisp tossed green salad. Tip: The turkey can be skinned before cooking to lower the amount of fat in the broth. A turkey carcass can be used. Simmer in the same way, strain and use the scraps of meat. Use ready-to-use, full strength broth that does not need diluting.
