  • Preheat oven to 350. Slice all the vegetables and put them in a deep glass Pyrex dish. Drizzle with olive oil to slightly coat them, then drizzle marinade over top.
  • Use your best judgement as far as how much to use--remember that the veggies will cook down a bit and make their own 'sauce' as you go.
  • Pop it in the oven (uncovered) and check about every 15-20 minutes to turn the veggies. Cook to your desired tenderness.


This really is probably the easiest recipe you can make. You may feel free to add/omit and vegetables you have (anything you have in the fridge works with this recipe), and add any additional seasonings you like. When the veggies are done I usually toss with wheat pasta (a much healthier alternative) and top with a bit of grated cheese. These also go very well with mashed potatoes. When I have leftovers, I bring them in to work the next day and make a veggie wrap. There are so many possibilities with this recipe. It's sure to please everyone in the family since it has so many different veggies! Bon Apetit!

    This was terrific. I took it to a family gathering and it was a hit - even with the funny name. In fact, our family renamed it - we call it "trashy pasta" because we fixed it with wagon wheel pasta. The only thing we omitted was the brocolli and that was just because my pan was so full I couldn't fit it in. But we decided we like it without it. I would definitely recommend this recipe!
