This really is probably the easiest recipe you can make. You may feel free to add/omit and vegetables you have (anything you have in the fridge works with this recipe), and add any additional seasonings you like.
When the veggies are done I usually toss with wheat pasta (a much healthier alternative) and top with a bit of grated cheese. These also go very well with mashed potatoes.
When I have leftovers, I bring them in to work the next day and make a veggie wrap. There are so many possibilities with this recipe. It's sure to please everyone in the family since it has so many different veggies!
