Garlic Chicken and Buttered Potatoes

  • Preheat oven to 400. Butter glass casserole dish or use non-stick spray. Clean the chicken, in and out, and set aside. Peel potatoes and cut them into quarters. Cut the onions in quarters as well. Peel and mince garlic.
  • Put the chicken legs up. Put the potatoes and onions around the chicken, and then the garlic. Melt butter and put on top of everything.
  • Place in oven and every 1/2 hour use the melted butter in the pan and coat the chicken and potatoes. Cook for about 2 hours. Check to see if the chicken if brown and the potatoes ar nice and brown also.


This is a recipe I got from my father, he passed this last March. This was my favorite dish he made. I know he would smile if it found its way into your magazine. Thanks for the chance.
